Pimento & Bacon Grilled Cheese Sandwich with Roasted Tomato Basil Soup
Sandwich
4 slices of Italian bread
6-8 slices of mild cheddar cheese
Pimento cheese spread
Butter
Pre cooked bacon
- Spread pimento cheese on one side of each bread slice
- Place a piece of cheddar cheese and bacon on top
- Close sandwich and butter each side.
- Cook sandwich in covered skillet on low medium heat, or cook on a sandwich press until bread is golden brown
Soup
4 tomatoes
3 cups chicken broth
1/2 cup heavy whipping cream
3 tablespoons Basil paste
Bulb of Garlic
28 ounce can crushed tomatoes
2 medium onions
Salt and pepper
Olive oil
2 tablespoons of butter
- Preheat oven to 375 degrees
- Slice onions and tomatoes in half, season with salt and pepper and toss in 2 tablespoons of olive oil
- Bake onions, tomatoes and garlic for 60 minutes then set aside for 15 minutes to cool
- Purée the cooled onions, tomato and garlic in a food processor until it has a smooth semi chunky consistency. Set aside.
- Bring the crushed tomatoes and broth to a simmer in a pot over medium heat
- Add the purée mixture to the pot with basil paste and simmer for about 30 minutes
- Add the heavy cream, butter and season to taste with salt and pepper
