Lemon Ginger Loaf
- 3/4 cup lemon juice
- 4 tablespoons chopped fresh ginger
- 4 tablespoons of butter room temperature
- 2 cups all purpose flour
- 1 1/2 cup of white sugar
- 2 eggs
- 1/2 cup sour cream
- Pinch of salt
- 1 teaspoon baking soda
- 1 1/2 teaspoon baking powder
- Zest of one lemon
- Vegetable oil spray
Lemon Ginger Glaze
- Juice of 2 lemons
- 2 cup confectioners sugar
- 1 Tablespoon grated ginger
- Zest of one lemon
- 2 tablespoons of heavy whipping cream
Loaf
- Preheat oven to 350
- Mix eggs, ginger, lemon juice and sour cream in a food processor
- Purée until there are no more ginger chunks
- Add the flour, baking soda, baking powder, sugar, butter and salt to a large bowl and whisk,
- Add buttermilk, lemon zest and egg mixture from the food processor
- Whisk until batter is smooth with no lumps
- Add mixture to a baking loaf or bundt pan that has been sprayed with non stick cooking spray liberally
- Bake for 50-55 minutes
Glaze
- Place sugar in large bowl
- Whisk together the lemon juice, lemon zest, cream, and ginger
- Slowly add lemon mixture to sugar and whisk continuously until desired consistency is reached
- Drizzle glaze over warm lemon ginger lemon loaf after it has cooled for about 10 minutes
