Grilled Pork Chops w/ Pineapple Chutney
Grilled Pork Chops
2 -3 pounds thick center cut boneless pork chops
Hot prepared charcoal grill
16 ounce of preferred store bought marinade
Favorite pork rub or spice season mix
- Place pork in a large sealed container and season liberally with pork rub
- Pour marinade over pork chops and seal. Place in the fridge at least an hour and up to 24 hours if desired
- Once desired marinade time has surpassed place each piece of pork on a medium heated area of the grill and cook until the internal temperature reaches 145 degrees. Note: This could range from 4 to 8 minutes on each side depending on the thickness. Make sure the coals are not too hot.
Pineapple Chutney
One half fresh pineapple diced
1 cup Apple cider vinegar
1 large yellow onion
1 cup brown sugar
1 cup pineapple juice
1 cup golden raisins
2 tablespoons mince garlic
1 teaspoon mustard seed
3 Serrano peppers
1/2 cup of grated fresh ginger
Teaspoon of salt
- Combine all ingredients, except the raisins, in a large saucepan and bring to a slow simmering boil.
- Once boil point is reach turn down heat to low and slightly simmer for about 45 minutes. Make sure to stir every 5 to 10 minutes.
- After thick consistency is reach top with the golden raisins and allow to cool.
Top grilled pork with the spicy sweet chutney.
