Grilled Pork Belly and Cheese Omelette
Perfect for breakfast or brunch
Prep Time: 60 mins, Serves: 2
Grilled Pork Belly
• ¼ cup of balsamic vinegar
• 4 strips of pork belly
• Salt and Pepper
• Medium bowl
1. Season both sides of pork belly strips with salt and pepper
2. Pour balsamic vinegar over strips in bowl, set aside for an hour
3. Set grill to medium heat
4. Grill each side 2-3 minutes watching closely to avoid burning
5. Remove from grill and let cool on plate
Omelette
• 3 eggs
• 1 tablespoon unsalted butter
• ¼ cup shredded cheese
• 1 tablespoon cream cheese
• 4 strips of pork belly (can substitute with bacon)
• Small cup
1. Melt butter in small pan over medium heat
2. Whisk eggs in cup and pour into pan
3. Let eggs set, then flip the egg patty over
4. Put half of the shredded cheese (save the rest for the top of the omelette), cream cheese, and pork belly strips on one side of the egg patty
5. Fold the egg patty in half
6. Press down until cheese is melted inside
7. Place on plate and put the rest of the shredded cheese on top
8. Cut in half
