Blueberry Mint Tea Biscuits
2 cups of all purpose flour
1 cup white sugar
1/2 cup blueberries
.5 ounce package of fresh mint leaves
1 tablespoon baking powder
1 teaspoon baking soda
1 cup buttermilk
Pinch of salt
6 tablespoons of butter chilled
- Preheat oven to 425 degrees
- Place mint leaves, buttermilk and blueberries in a food processor. Pulse for about 30 seconds
- Chop cold butter into small chunks and add to all dry ingredients in a large mixing bowl. Stir together
- Pour the buttermilk blueberry mint mixture into the dry ingredients bowl and combine with a spoon until dough is formed, should be somewhat wet
- Using a spoon, scoop out balls of dough and place on a buttered sheet pan. Makes about 9 biscuits
- Bake for 10-12 minutes until biscuits are golden brown. Top with additional melted butter if desired
- Serve with honey and tea
