Weekend Recipe : Avocado Cucumber Egg Salad Sandwich

This is a great lunch recipe

In our version we didn’t use mayonnaise – the avocado was enough to get the right texture for the mixture. The cucumber provided a refreshing taste and toasting the bread gave it the perfect crunch to compliment the filing.
